Carving is an ancient Asian art of carving fruits and vegetables that occurs prior to about 700 years in Thailand and then spread to China and Japan. For centuries, the secrets of the craft only be transmitted between generations in the family. In recent decades, art sculpt masterpieces from fruits and vegetables leaving the confines of Asia. Today, carving is considered aerobatics in cooking. Carving master Nikolay Radulov will show us the depths of the ancient culinary art that is becoming more and more popular in our country.

When I graduated high school, just before I was accepted into the university, I got a seasonal job - bellboy in a small hotel where I met the chef - Marjan Kostov. Later, I started working with him on the bottom step into the kitchen. When he started to deal with the carving, I loved it, I tried with tenacity and enthusiasm developed the necessary skills.

And a bit of both. He had a book of which began to teach himself about seven years ago. Then information on the internet was very scarce. He taught me many things, but one has to put something on my own. You can not expect everything to be your display.
Are there schools where they teach those willing to deal with the carving?
In Bulgaria, I dare say that the carving is underdeveloped. I know a few good artists - Vesselina Slavcheva that has trained in Thailand, lives in Sofia and provides training, Yuri Dimo, but he is now in London and Marjan Kostov in Bulgaria. One option is the one to turn to one of them, and the other - to study abroad, preferably in Thailand.
Traditional Asian schools you are the best, or already have other nations that have established themselves in carving?
Are best schools in Thailand and Taiwan. In China and Japan carving is also very common. Outside Asia, the Russian school of Alla mouse is very good, also Turkish, although not as strongly developed.
Carving is usually associated with the processing of fruits and vegetables. Are there other materials which may be used?
Carving, translated from English means carving. Hence can be interpreted as carving fruits and vegetables. Exists ayskarving wherein treated ice. Can be made pieces of chocolate, butter, even cheese. The material must be hard, but not too much to be processed.
After the "carving" means carving, is there anything in common between the tools that are used in both types of art?
Tools which was treated wood are much different from those used in the fruit and vegetables. Unable to carving knife to treated wood and vice versa. In the carving of fruit and vegetables a masterful 90% of their work using knives. Of course, there are special chisels with which they can help, but a self-respecting artist uses a knife. Called tai knife. It is more flexible. Carving knives are hard and do not bend. The processing of the ice using chainsaws, like electric saws for firewood, large chisels and dremel.
How long a watermelon can become a flower or if I make an analogy with the story of Cinderella, how long the pumpkin turns into a carriage fine?
The time depends on the complexity of the parts. There have been instances where I've made watermelon for 10-15 minutes, but it is a simple motifs that are repeated many times. If you do miniatures and finer details that require more attention, then take a long time. It has happened to spend two and half hours for a watermelon with the logo of Manchester United. In this case the use of templates. It is time to shape and cut template. The more details you have, the more time is needed for preparation.
When you injure the bark of fruit and vegetables, they fade very quickly. Can the products to be treated in some way so as to keep fresh for a longer time?
Watermelon is difficult to keep more than 2-3 days. Freshness is maintained by spraying water, but there are preparations that can be used. If you stay outdoors all day, it will fade away even till evening, but if you earn only a few hours, while harvesting is moistened and wrapped in transparent film, then you will stay fresh longer. This depends on the product. There are varieties that withstand very long time.
Besides melons and pumpkins, what other fruits and vegetables can be used?
Use beet, turnip, carrot, melon, pomelo, grapefruit, oranges, cucumbers, tomatoes. Peach is very difficult to do something, but there are enthusiasts who try. Almost no limit as long as you have the opportunity and desire to experiment with new and exotic fruits and vegetables.
When do decorations for cocktails and weddings, do not you think that art remains in the background? Are there any events that focus specifically on the work of carving masters?
Decoration, whether of fruits and vegetables, or other, in addition to an event. An aesthetic and mood and I do not think art should be written down or downplay this. Of course, held competitions in the field of gastronomy, which has a section for carving. The most common place where people can see and appreciate in restaurants and hotels, at parties, weddings, proms.
After the decoration has fulfilled the role as such, some have proceeded to the tasting?
In the hotel where I work, usually not present during the night, but colleagues say that some people allow themselves to munch on radishes and watermelons. Generally reluctant to spoil the decoration, but generally not a problem and after tasting event.
How to become a carving master?
With hard work. In my hands are tons of years past. In each there are art work and talent. There are people who have not given their simple but hardworking and focused and at one point develop the necessary qualities. Others are very talented, but spend a little time. Everything is individual and there is no exact recipe. Surely to become a master carving and you need good tools, which, unfortunately, are quite expensive. If one wants to deal seriously with this art, you should invest in quality tools.
